The production requires a lot of time and care, since the olives together with  the  Lemons are processed into a mash.  Because only by breaking them open together does the oil of the olives combine with the essential oils of the lemon. The mash that is produced here is much more liquid, which means that it takes almost twice as much time to extract the oil.
