We like to call olive oil a mild cooking oil. It  is stored longer in stainless steel tanks. 
 Due to the longer storage time  it becomes milder and loses some of its natural bitterness. 
 It splashes less in the pan and is therefore particularly suitable for cooking and frying. 
 If you generally like it mild, you can of course also use it for salads, soups, etc.
